Healthy And Delicious Curry-Lentils-Soup

I noticed that I haven’t posted any recipes for a while. Thus, I thought it is time to get some more healthy recipes on this website. As I changed my eating behavior from a carbohydrate-based diet to a more protein-based diet, I’d like to show you a very quick, but healthy recipe for a vegetarian protein-rich soup: My smart and delicious curry-lentils-soup.


What do we need?

 50g red lentils

1 onion

500ml vegetable broth (ideally home-made, or, if you don’t have any, you can also use organic instant broth without MSG or yeast extract)

1 tablespoon of curry powder

2 tablespoons of low-fat yogurt

salt

pepper

bell pepper powder

some canola oil


Preparation:

1. We peel and cut the onion into little pieces. We heat the canola oil in a stock pot and fry the onion pieces until they become translucent.

2. We now deglaze the onions with our vegetable broth and add the lentils.

3, We cook the lentils up and add the curry powder. Then we let it all cook at medium temperature for about 25 minutes.

4. As soon as the lentils are soft, we season the soup with salt, pepper, and bell pepper powder.

5. If you prefer a creamy soup, you can now mash it.

6. Now we add the yogurt to the soup and mix everything properly.


That’s it. This is an easy-to-prepare, but very healthy soup. It only provides you with 80 kcal per portion and very low amounts of fat. However, this soup is rich in proteins and fiber. Also, it provides us with amounts of B vitamins, folic acid, and iron.
